Vancouver’s JW Mariate Balroom’s site echoes from the bustling of dance music and conversation 2025 50 Best Bars of North America Awards Festival. Sorting the edges of the room is funded by the host of the event – Goindru, Berrier, Remy Martin and others. Members of the Rayo bar of Mexico City make up Spiritz and Necrons, and they are not sure that Rayo will become one of the highest profiles of the night, as they bathe in the warm pink light of the Gambari Stand, although in the fifth place in the last year, he has completely disappeared from the list.
But in recent years, anyone who focuses on Mexico’s bar scene has had some other wild surprises because a total of 18 bars have taken the top 100 places.
Limandur has long been installed. The winners of the past – the Arupa Day drink in Dijuana, the Cafe de Nadi in Mexico, and Selva in Okshaka, continued their streak as members of the club.
There are a few people from Mexico this year, but no additional will shock cocktail enthusiasts in the capital. Bar Ma Au Row in Roma Norde has been appreciated since it was opened a few months ago, and qualified #14. Bijo entered the list on the top of the Esquel de Castromia in Cantesa.
“I think 50 best is surprised at the Mexico City Bar scene, but I think the opening bars are pushing forward, and I think they were actually the biggest change,” said Eric Van Peak, co -owner of Mexico’s Handshake Speaker, which topped the list two years later.
“When I arrived in 2019, there were fifty Mills, Limandur, Hanki Banki and Baldra, and now people are really pushing their cocktail project, service and their standards. Of course, 50 best have helped with it, because people get recognition, but at the end of the day.
Claudia Kaprera, co -owner and Bar director of Mexico City’s Kitto Dell Wale, is another list winner of this year. “Even my friends who are not really in the cocktails will tell me about a trendy new cocktail bar that they suddenly went.”
“We have seen a big change,” says Kaprera. “We are in a family neighborhood. When the list suddenly came out, people (Dell Walley) began to come.” Kito Del Walley has been a little bit of a tourist at the city of Mexico for the past eight and half years at Colonia Del Wale, a neighborhood in Mexico. “We know that there is really nothing else around us, so we know that it is associated with it. Our vibration was like a small dive, like a neighbor, but now we have seen people looking for us especially.
Eli Martinez, the owner of Tlechan, who won #3 this year after entering #10, said, “I think this list reflects the diversity of the scene.” It is a pleasure to see the bark that have endless resources at their fingertips within the hotels, as well as on the same list of the same list that compensates for their own money.
Martinez won the Bartender Bartender Award this year. The award is voted from the 50 Best List of other Bartenders, and is one of the most valuable awards presented at night and has had a significant impact on their peers in the bartending and industry.
Cocktail bars and mixing in Mexico are increasing long over the last three years of the list of 50 best bars in North America, but there is no doubt that the list has promoted the industrialization and expansion of the industry among participants.
Martinez says: “The status of the mixture is clearly improved and it is now common to find a beverage menu with a real story.”
“You see a good drinks plan and focus on hotels and cooks and other persons,” Kaprera says. “I think we are all very proud of our products in the last six or seven years. We are using more blue sapphire, more local products, more local brands, and everyone has more cooperation. The drinks are very small. They have never seen it before.
Martinez agrees. “I think the trend is more and more in the direction that shows all the recipes and cultural richness of Mexico,” he concluded.
